Cauliflower is made up of tightly bound clusters of soft, crumbly, sweet cauliflower florets that form a dense head. Resembling a classic tree, the florets are attached to a central edible white trunk which is firm and tender.
Ridge Gourds are long vegetables with a ridged dark green skin and white spongy flesh that contains numerous seeds inside. They are rich in fibre and very prominent in Indian cooking.
With the common household name 'Lauki', Bottle gourds come in different shapes and sizes. Considered as one of the healthiest vegetables around, the flesh of bottle gourds are full of water and taste slightly bitter.

Storage and Uses
- Do not cut cabbages unless you are immediately consuming as it begins to lose vitamin C when cut. If you absolutely cannot immediately finish the remaining cabbage, wrap it tightly in plastic wrap and store it in the refrigerator for up to two days. Keeping them in the refrigerator retains the crispiness of the vegetable. Shredded cabbage can be directly added to any salad and sandwiches as they are most nutritious when eaten raw. Also used in pickles and flatbreads. Stew fried cabbage, onion, garlic, bell pepper and green chillies mixed with steamed rice, and soya/chilli/tomato sauce is a popular favourite (Chowmein) in China and other South-East Asian regions.
- Refrigerate in a loosely sealed plastic bag. It keeps well for up to 7 days. Do not store florets for more than 5 days. Cooked and used in soups, rice, curries, gobi parathas( flatbreads), one of the most liked recipes.
- To keep ridge gourds crisp, wrap them in a plastic bag and refrigerate. Used in curries, dal, sambar, soups and fried dishes. To prepare snack bajji, dip it in chickpea batter and deep fry.
- To keep it as fresh and healthy as possible, store the entire gourd in a plastic bag or sealed container and refrigerate. Chopped gourds can be stored in a glass or steel container and refrigerated. They can be used to prepare curries, dals and even sweets. For your morning breakfasts, try bottle gourd dosa instead of the normal one for a healthy change.
